For New Yorkers, leaving the city means connecting with nature, but that does not mean we cannot enjoy it in luxury. Wildflower Farms

Naturalists and food and wine connoisseurs seeking a luxury respite should head north to Ulster County’s swankiest resort, Wildflower Farms, Auberge Resorts Collection. The alluring Hudson Valley destination is the epitome of sophisticated country vacationing that, despite the price, somehow still feels approachable. The nature-inspired retreat sits on a 140-acre property in Gardiner and offers guests an idyllic experience that includes a stay in a free-standing cabin, a spa, year-round outdoor hot tubs, hiking trails, a number of interactive activities, and farm-to-table dining. When visiting Wildflower Farms you are treated to unparalleled views of the mighty Shawangunk Mountains and, as you might have guessed, wildflower meadows. Both the indoor and outdoor aesthetic was inspired by Swiss and Dutch designs, which resulted in a modern look that works perfectly with its wild surroundings. Needless to say, mother nature is front and center at Wildflower Farms, so come ready with an itinerary of outdoor activities in mind.  

The draw to visiting Hudson Valley is its relaxing environment, where you can get a taste of upstate living. At Wildflower Farms guests are invited to get their hands dirty by taking a stroll with the property farmer, picking their own ingredients for cooking or cocktail making workshops, feeding the chickens, and picnicking in the meadows. Additionally you can schedule a number of activities outside of the resort, like fly fishing and biking. Adventurers can bike to the nearest town of New Paltz, known for its beautiful hiking trails, bohemian art and apple orchards. On the other hand, if you are someone who prefers relaxation, you can happily cocoon yourself at Thistle Spa. The 9,000-square-foot spa has an outdoor pool, indoor saltwater pool, sauna, and a unique treatment menu, which uses local products from Cultivate Apothecary. 

Fresh farm-to-table dishes are yet another reason to stay here, so make sure to visit Clay, the resort’s signature restaurant. The food and drink menus put a spotlight on Hudson Valley farms and ingredients. This includes an impressive New York wine list. The Auberge brand was born in Napa Valley, which tells us that they know a thing or two about wine. This week, the resort is hosting a pasta-making workshop and a dinner party, complemented by canapés and artisanal cocktails from Great Jones Distillery, all hosted by visiting Chef Melissa Rodriguez. It is easy to see how the Auberge brand puts an emphasis on providing a “holistic epicurean experience.” This is the kind of place that allows you to create your own idea of a restful stay. Come here if you look to get back to nature, and bring someone who feels the same.

Klocke Estate

For a distinctive dining experience that includes a brandy tasting, find yourself at the charismatic Klocke Estate. The soil-to-glass distillery and farm offers guests an immersive experience that will have you talking about it for weeks to come. Located on 160 acres in Claverack, the impressive property features views of the Catskill Mountains, vineyards and orchards as far as the eye can see. The estate uses regenerative farming practices to enrich their land and grow 60 acres of grapes and apples, while committing to the centuries-old craft of fine brandy. The modern but inviting Klocke Estate was designed by Barlis Wedlick Architects, with the help of interior curation by designer Ken Fulk. The elegant space is a Hudson Valley jewel where you can come have a special experience, attend an event, or come have a glamorous day of drinking brandy cocktails, while gazing at their panoramic views. 

The fine-dining experience at Klocke Estate feels elevated, but not pretentious. The chef at helm, Chef Becky Kempter, uses ingredients sourced from local farms, and as you might have guessed, the cocktail menu is all about the brandy. You can also try a selection of wine and beer. Among the delectable offerings is caviar service, a pyramid made of fresh vegetables, chilled shellfish, farm and eggs. 

The Founder and CEO behind Klocke Estate, John Frishkopf, looked to create an exceptional space, one that provides a deep connection to the land. “It is my hope that Klocke Estate will not only define a new category of American Brandy in the Hudson Valley but that we will create an experiential destination and a legacy of excellence to transcend generations, positioning Klocke as a leader in the world of extraordinary spirits and elevated hospitality,” he says. The Estate will offer limited releases of unaged brandy, but is primarily maturing its eau de vie in French Limousin oak barrels with an eye towards the future. The brandy that will be bottled and released as it matures over time. The unaged apple brandy is priced at $150 per bottle, and only available at the distillery. 

The experience at Klocke Estate allows us to see Hudson Valley through a new perspective. As an extra bonus, antiquing enthusiasts will be happy to know the estate is located 10 minutes from downtown Hudson, a town known for its many home design and vintage shops. Klocke Estate started their pilot program of tours and tastings on August 3rd, and they plan on hosting live music events, like a harvest party in the fall. From the beginning to end, the Klocke Estate is a one-of-a-kind experience. Come here with someone who enjoys new culinary experiences, brandy, and is in need of an elegant outing.

Mohonk Mountain House

There is no New York resort more renowned than the majestic Mohonk Mountain House. The beloved five-star retreat sits near a pristine mountain lake and is surrounded by scenic forests. Many come here to hike, but staying at Mohonk is a memorable experience. Founded by Albert Smiley in 1869, the resort’s Victorian castle-like structure is a national historic landmark. The resort started as a 10-room inn and it continues to stay in the Smiley family. Nina Smiley is a hands-on type of owner, navigating the resort with ease and heading the wellness program. It is no wonder that Mohonk Mountain House is a beloved destination that frequently makes it to the top of lists for best all-inclusive resorts. 

Outdoor and sports enthusiasts will find that this is a great place to break a sweat. Get energized with activities that suit your needs, among them is archery, horseback riding, mountain climbing, guided hikes, canyoning, and tennis, Taking the canoe out on the lake is a coveted and tranquil activity, as this is where you can get some of the best views of the hotel and its surroundings. One of the highlights of our visit was getting to enjoy the property garden, where we remembered that this is the very spot where they filmed the show, Upload. For even more serenity, snuggle up in a rocking chair, located on a porch in the Bavarian ski-lodge, which overlooks the lake. 

If you wish to visit without staying at the hotel, the 85-mile hiking trail network can be enjoyed with a day pass. The resort provides a separate parking area for hikers, and a map that helps you navigate the property. Believe us when we say, it is worth it! 

Once you are done making memories outdoors, you will be hungry and want to make a reservation for dinner in the Main Dining Room or The Granary. At the helm of the kitchen is Executive Chef, Jim Palmeri. For drinks head to the Carriage Lounge. This is where you can sip on micro-brews, old fashioned sodas, and cocktails. Executive chef Jim Palmeri and executive pastry chef Audrey Billups team up to create menus that reflect the region, ensuring the guests are nourished and happy with dishes like their Roasted Beef Tenderloin and Mohonk Crunch Cake. This fall you can pick from a number of culinary events, like their Wine Pairing Dinner with Booker Vineyard. 

Mohonk Mountain house is famous for their lavish spa and their recently upgraded 30,000 sq ft. wellness space includes an impressive outdoor treatment sanctuary, which overlooks the lake. An outdoor massage is just what the doctor ordered. The spa’s new director, Shannon Malave, plans on new wellness experiences while being committed to the resort’s legacy of sustainability. For a tranquil stay, book yourself a mindfulness session or a hydrotherapy massage. The spa features an outdoor heated mineral pool, large indoor pool, 16 treatment rooms, fitness center, and more. Mama Farm

For an understated luxury experience that feels intimate and puts emphasis on homesteading and wellness, find yourself at Mama Farm Bed & Breakfast. Founded by actress Isabella Rosellini, the 28-acre farm in Brookhaven focuses on the preservation of biodiversity. Inspired by the actresses’s Italian heritage, the property is styled like an Italian piazza, welcoming guests to immerse themselves in the environment and cultural happenings. The ultimate goal is to create a community and future environmental stewards. The farm raises species of sheep that are nearly extinct. No animal is harmed here, but they do make super stylish ponchos from their wool. The stay at Mama Farm is a cozy and eye-opening experience. From the interior decor to the farm, there are personal touches from Rossellini in every corner. Every guest room has its own personality. While there is a “David Lynch room,” with cheeky prints from Blue Velvet and Wild at Heart, the rooms mostly put special emphasis on styles depicting animals and farm living.
