WHO TO TAKE: AN ADVENTUROUS DRINKING BUDDY OR SOMEONE WHO IS SCIENCE MINDED

If you’ve never had a drink designed the Ryan Chetiyawara team, put it on your bucket list (see Hobnob’s review). Behind each concoction is an immersion into science and nature which goes above and beyond, creating cocktails unique and extraordinaire. In this final chapter of this London bar’s concept, the menu focuses on three core ingredients—mint, hops, and grapes. Dandelyan’s team are interested in the future of food and sustainability, so are doing in-depth research learning how each plant lives, reproduces, and is grown on a mass scale to meet demand.

The menu includes four cocktails for each ingredient, as well as a ‘classics’ section that showcases the team’s current favorites. A sampling: Using mint, the Stranger Things Old Fashioned includes Jim Beam Rye, valerian, habanero, and chamomile bitters. With grape as its focus, the Space Fix mixes Courvoisier VSOP, yellow pepper sherry, and a sparkling passionfruit wine.  Hops come alive in the Re-Supply Sour, a mix of Empirical Spirits Koji Hooch, Compass Box Oak Cross, nutrient-enriched cardboard, and raspberry.
